Aspic rings were a great feature at luncheon parties when I was growing up in the States. This tomato aspic is so light and refreshing that it is a perfect first or salad course for today when everyone is health conscious. It can be served on its own or the centre can be filled with cottage cheese and chives, shrimp salad or any number of combinations. I like this cucumber and yogurt one.
