In America, ‘corn’ means maize, and what could be more American than Corn Bread, from a country where ‘corngrows as high as an elephant’s eye’? The Pilgrim Fathers made use of this nourishing grain as the Indians had before them, and it was served in different ways at almost every meal. Crisp-crusted corn muffins, or bread sliced piping hot from the oven, are a great treat with butter and jam. It is perfect for tea or to serve with a meal in place of your usual bread.
