In New Amsterdam (the old name of New York), tea-time was a social occasion and an apple cake such as this one might have been among the assortment of cakes presented to honoured guests. My guests have certainly enjoyed it and have often asked for the recipe. There is a wonderful contrast in the taste and texture of the brown crunchy top and the soft apple centre. It is pretty when baked in a tubular shape and the centre filled with ice cream or whipped cream.
