Ingredients

  • 1 large pork fillet
  • 2 egg yolks
  • ½ tsp salt

Method

Spit-roast the fillet, or oven bake at 180°C/350°F/gas mark 4, on a grid in a roasting tin, for some 40 minutes until tender.

Beat the remaining ingredients together, adding a little water as necessary to produce a thick, paintable paste. Brush this over the fillet, return to the heat until set, then brush on succeeding coats until the batter is used up, then serve.
