THE GALOUTI: Scrape, wash and finely chop ginger. Remove stems, wash, slit, deseed and finely chop green chillies. Clean, wash and chop coriander. Mix the vegetables with the chicken mince, add garam masala, salt and cashewnut paste, knead well. Divide the mixture into 24 equal portions to make galouti of 1-inch diameter. Roll in c
