The floral notes in a Jasmine-scented green tea insinuate themselves beautifully into the white chocolate. Good quality white chocolate provides the best results in this yin-yang ensemble. The bitter lime sauce sets off the sweetness of the white chocolate with mouth-satisfying results.

  • 8 ounces/240 grams fine quality white chocolate, finely chopped

Method

Prepare the bitter lime sauce first as follows then set aside. Bring the lime juice and sugar to a boil, then cook over medium heat until sugar is dissolved. In a small bowl, dissolve the cornstarch in water then add to the lime juice mixture. Stir until the mixture thickens slightly. Allow to cool. Add butter and grated lime zest and stir to combine.
