There are many variations of this dish, and arguments over both its name and exact ingredients are ongoing, but it is essentially a mixture of a cheesy white sauce or cheese, butter, mustard or worcestershire sauce and beer or wine. The mixture can be spread over toast and grilled, or melted and then poured over toast. Welsh rarebit also goes by the name ‘Welsh rabbit’.
