To ‘spatchcock’ describes the method of preparing a chicken or other bird by either cutting it in half along each side of the backbone, or splitting it along the breastbone. The chicken can then be opened out and flattened, seasoned and grilled. The word is thought to have come from an old English innkeeping term, ‘to dispatch cock’, meaning that the chicken was killed, then split so it could be cooked quickly for a traveller.
