Pronounced keen wa, this tiny seed has been used as a cereal for over 5000 years, and regarded as a sacred food by the Incas who called it ‘the mother seed’. The quinoa plant produces masses of small seeds, usually pink or white. Quinoa provides one of the best sources of vegetable protein and an essential amino acid balance. It has a very delicate flavour, comparable to couscous and is often a
