  • 8 dried shiitake mushrooms
  • 1 tablespoon vegetable oil
  • 2 teaspoons

Method

  1. Soak the dried mushrooms in boiling water for 20 minutes. Squeeze dry, discard the stems and finely chop the caps.
  2. Heat a wok over high heat, add the oil and swirl to coat. Add the ginger, garlic, white pepper and a pinch of salt and cook for 30 seconds. Add the chives and water spinach and cook for 1 minute.
