When buying swedes, choose those with a purplish top and fresh green stalks for the finest flavour. Store in the fridge for up to 10 days, though they will soften and their flavour strengthen. Should you find the flavour too strong, simply blanch them for 10 minutes, then discard the cooking water and resume cooking in fresh water.

Ingredients

  • 4 swedes (rutabaga), scrubbed
  • tablespoons olive oil
  • 40 g

Method

  1. Preheat the oven to 180°C (350°F/Gas 4). Rub the swedes with one-third of the oil. Place each in the centre of a 30 cm (
