This is a white béchamel sauce to which grated cheese is added. Other ingredients such as egg yolks, mustard, cream or stock may also be added. Food served with mornay sauce is usually coated in the sauce, sprinkled with additional grated cheese and/or breadcrumbs, then grilled. Serve with fish, shellfish such as oysters and lobster, eggs, vegetables and chicken.
