  • 2 cloves 1 onion
  • 250 ml (9 fl oz/1 cup) milk 1 bay leaf
  • 50 g (1ΒΎ oz) fresh breadcrumbs (made using about 3 slices of day-old bread)
  • 60 ml (2 fl oz/ΒΌ cup) cream


    1. Push the cloves into the onion and put in a saucepan with the milk and bay leaf. Bring just to the boil, then remove from the heat, cover and leave for 10 minutes for the flavour to infuse the milk. Remove the onion and bay leaf.
    2. Add the breadcrumbs to the milk and season. Return to the heat, cover and simmer gently for 10 minutes, stirring occasionally. Stir in the cream. Serve warm with roast chicken, turkey, goose or game.
