You will need a melon bailer to make these marble-sized potatoes. This Franglish title alludes to the actual French name, which is pommes noisettes.

Ingredients

  • 5 large waxy potatoes, peeled
  • 3 tablespoons olive oil
  • 4 tablespoons

Method

Using the large end of a melon bailer, carve the potatoes into balls. Soak the balls in cold water to cover for 30 minutes, drain, and pat dry with kitchen towels.

In a skillet, heat the oil over high heat. When it begins to smoke, add the potatoes and sauté, tossing gently every 60 seconds, for about 7 minutes, or until the potatoes are golden brown. Turn down the heat, place the potat
