These are my favorite variation on classic peanut butter cookies. They have a real peanut crunch. My friend Jennifer Migliorelli developed this recipe when she was working as a chef in an American restaurant in Hong Kong.

Ingredients

  • 8 tablespoons (1 stick) unsalted butter, softened
  • 1 cup firmly packed dark brown sugar<

Method

  1. Set the racks in the upper and lower thirds of the oven and preheat to 350 degrees.
  2. In the bowl of a standing electric mixer fitted with the paddle attachment, beat on medium speed the butter, the sugars, salt, and peanut butter just until smooth. Add
