Add ½ c. chopped, drained pimiento to Basic Mashed Potatoes. Line a 1½-qt. casserole with aluminum foil. Spoon half the potato mixture into casserole. Shape into a nest, building up the sides to top of casserole. Remove from casserole with foil to hold shape of the nest. Reline casserole with foil and shape remaining potato mixture. Cool; freeze nests until firm. Remove from freezer; package, seal and label. Return to freezer. Serve with chicken filling (see recipe for Chicken in Potato Nest).
