  • ½ cup Mayonnaise
  • 1 hard-cooked egg
  • 1 tablespoon finely chopped shallots
  • 2 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped chives
  • 2 tablespoons capers, drained and pressed to extract excess liquid
  • 1 teaspoon lemon juice
  • ¼ teaspoon Tabasco sauce


  1. Put the mayonnaise in a mixing bowl.
  2. Put the egg through a fine sieve and add it to the mayonnaise. Add the shallots, parsley, chives, and capers. Add the lemon juice and Tabasco sauce and blend.
