  • 1 cup Mayonnaise
  • 1 tablespoon finely chopped shallots
  • 1 tablespoon finely chopped onion
  • 1 tablespoon finely chopped chives
  • 1 tablespoon water
  • 2 hard-cooked eggs, pressed through a sieve
  • Salt to taste, if desired
  • Freshly ground pepper to taste
  • 1 tablespoon chopped parsley

Method

Combine all the ingredients in a mixing bowl and blend well. Serve with cold or lukewarm fish or meats.
