It seems carrot cake is not an American invention. Granted, this version lacks the ubiquitous cream cheese frosting, but there’s no reason it cannot be served with a dollop of mascarpone cheese.

This recipe is a combination of three carrot cakes from the Veneto, all of which had something good and something not quite right about them. Two were from Fernanda Gosetti’s I dolci della cucina regionale italiana, and one was from Giovanni Capnist’s I dolci del V
