Sauce coulis de framboises, fraises ou cassis ‘Useful fruit sauces to keep on hand’


Main ingredients

  • 300 g (generous 8 oz) raspberries, strawberries or blackcurrants (fresh or frozen and thawed)


  1. Hull and pick over the fruit in a colander and if necessary wash them quickly in running water. Drain, and dry carefully with kitchen paper.
  2. Put them in the liquidiser with the sugar and lemon juice and blend for 2 minutes.
  3. If you like a very smooth sauce push the purée through a wire sieve with the back of a small ladle to eliminate any remaining see
