Beef Dumpling Soup as in Lőcse

  1. Make the dumplings. Bring 4 cups water to a boil with the salt, and cook dumplings over very low heat for 20 to 25 minutes. Stir the water carefully several times.
  2. Lift the dumplings from the water with a slotted spoon and place them in a soup tureen. Keep the water at a simmer.
  3. Beat the egg yolks, then whip them into the simmering water. Add the beef broth, lemon juice and parsley. Pour the soup over the dumplings in the tureen.
