Wilted Greens with Smoked Tomato, Bacon Bits, and Lime Dressing


  • 1/2 cup bacon bits (fry ’em up)
  • juice of 2 limes mixed with a little leftover bacon fat
  • salt and pepper to taste
  • 1 head washed chicory
  • 1 head washed kale
  • 6 plum tomatoes, smoked over low fire on grill and cooled


Heat bacon fat with lime juice, salt, and pepper. Toss hot dressing over washed greens and toss greens until slightly wilted. Serve with smoked tomatoes and bacon bits.
