This is a good way to use up left-over mashed potato. The stuffed potato balls are delicious served instead of roast potatoes with lamb, pork or chicken.

Ingredients

  • cold mashed potato
  • Fresh Mint Chutney with Coconut
  • 1 egg, beaten
  • browned breadcrumbs
  • oil f

Method

Form the mashed potato into balls about the size of ping-pong balls. Make a hole with the end of a wooden spoon in each and put in a little mint chutney. Seal over with potato. Dip the balls in the egg and then in the breadcrumbs and deep fry until golden.
