This rice can be served with all kinds of Indian and oriental dishes. With Turkish or North African dishes you can add 1 oz (25 g) currants and 2 teaspoons (2 X 5 ml spoon) dried dill with the onions and omit the turmeric, giving you white rice instead of yellow. For Indian dishes add a little ground cinnamon with the turmeric.

Ingredients

  • 2 onions
  • 6 oz (150 g) long-grain easy-cook rice

Method

Peel the onions and chop into small pieces. Put the rice into a sieve and wash thoroughly under hot running water.

Melt the oil and butter in a heavy-based saucepan and add the turmeric and the onions. Season with salt and a pinch or two of cayenne pepper and cook gently until the onion is just soft. Then stir in the washed rice and add the water. Cover the pan and simmer gently for 8-1
