This appetizer curry features Punjab’s two passions: those bite-size morsels of chicken called kebabs, and pungent, tasty, nutritionally blessed mustard greens (they are a rich source of iron). To make it your dinner, double the amount of chicken; there will be plenty of sauce.

Ingredients

  • Bamboo or metal skewers
  • 8 ounces fresh mustard greens, coarsely chopped (see Tip)

Method

  1. If you are using bamboo skewers, place them in a flat dish filled with water and let them soak for an hour (see Tips).
