A specialty of the Syrian Christian community in the southwestern state of Kerala, this curry (usually made with mutton) is not as cumbersome to make as the list of ingredients might lead you to believe. These are all commonly available items that prove yet again that unusual techniques applied to easy-to-find spices can result in outstanding flavors. I love the textural contrast that the coconut chips offer against the tender lamb.
