Restaurant-style palak paneer has a very smooth texture because the spinach leaves are pureed. I prefer to leave the spinach leaves whole, providing a better textural backdrop for the fried cubes of paneer. Serve this curry with either homemade rotis or store-bought whole-wheat tortillas.
