Red amaranth leaves not only look pretty, they taste delicious, especially when stewed with roasted mustard seeds and peanuts. Filled with nutrients, these stewed leaves are a great side dish with Sweet-Hot Yellow Split Peas with Golden Raisins and white rice. I also love the smoky-crunch of Flame-Toasted Lentil Wafers as an accompaniment to this simple vegetarian fare for a weekday dinner.
