Sometimes simpler is better. The few spices in this curry maintain the mellow cauliflower flavor and highlight the caramel-sweet onion. Don’t be alarmed by the abundance of cayenne—the slow-cooked onion will absorb some of its heat with the tart assistance of the diced tomatoes. This a perfect side dish to serve with Pigeon Peas with Chiles and Jaggery and white basmati rice.
