Great as an icebreaker, this curry appeals to those who are just starting to explore the Indian way of eating. Most of the spice and herb ingredients are aromatics, and so do not generate pungent heat. The chiles in the spice blend are quite mellow, and whatever wisp it exudes is further tempered by the presence of rice flour, which acts in a double role (like a Bollywood actor). Serve it with some Sweetened Mango Puree with Milk and a stack of puffy
