In this curry, fenugreek leaves take the limelight, breathing their perfumed bitterness into every half-moon slice of the humble potato. Whenever possible, I serve this curry with an unobtrusive-tasting flatbread like roti or poori, or even with mellow-tasting Rice with Yogurt and Mustard Seeds.
