Moghal emperors, who ruled parts of India just before the British regime, introduced the plump, sweet, sun-yellow raisins known as sultanas, appropriately named after the Sultans. Stir-frying the raisins releases their inherent sugars, making them even sweeter, which provides a sugary balance to the spicy hint of ground red pepper in this curry.
