Humble peasant food, baati is common in Rajasthani kitchens in northwestern India. These are crusty buns, rather dry and mealy, that are meant to be broken apart and soused (and I mean it) in warm ghee. Baati is an accompaniment for many Rajasthani legume-based curries, including Five-Lentil Stew with Cumin and Cayenne, offering a crunchy but rich-tasting bed for the potent curry.
