Polenta is corn meal porridge and was, for hundreds of years, the food of the poorest people in northern Italy. It has very little nutritional value and no vitamin or mineral content, an inauspicious health base for its current popularity. It does, though, make a splendid foil for richer flavours and, while some people find it unpalatable as a basic gruel, the addition of butter and grated Parmesan elevate it and make it a delicious alternative to mashed potatoes.
