In Flanders, these rolled Nieuwjaarswafels (New Year’s waffles) or ijzerkoeken (iron-cakes, as they are baked in an iron) aren’t very common, but they are a tradition in Wallonia and in the Netherlands. In the Netherlands the waffles are made flat on the days leading up to 1 January because the year had been rolled out, and on New Year’s Day the waffles are rolled up because the year has yet to unroll itself.
