Ingredients: 400 g (14 oz) sweet potato; 50 g (1¾ oz) unsalted butter; ¼ teaspoon sea salt; ¼ teaspoon smoked paprika; 1 tablespoon dried bruschetta herbs or oregano; ¼ teaspoon baking powder; platte kaas (fromage blanc, quark) or sour cream or skyr; chervil sprigs; cracked black pepper; 2 eggs, separated; 50 ml (1¾ fl oz) full-fat milk; flat-leaf parsley; 100 g (3½ oz) cheese, such as semi-mature gouda, cheddar or red Leicester; 100 g (3½ oz) plain flour; 100 g (3½ oz) strong (bread) flour; ¼ teaspoon ground cumin

These waffles are the best savoury waffles you will ever make – in my humble opinion, anyway. The spices provide a subtle flavour in the background: they aren’t meant to be pronounced, just to support.

I serve them with our traditional platte kaas (quark or fromage blanc), which is also used in the cheesecakes of Wallonia or smeared onto bread, topped with radishes and served with Gueuze beer.
