As described in the previous pages, vollaard is the primary festive loaf of the Southern Netherlands, which is current Belgium. Its earliest appearance in print is as an ingredient for waffles in a cookery book printed in Antwerp in 1560. Recipes are rare because this loaf was always made by the bakery and never at home.
