Beans make healthy and satisfying soups. They are high in fiber, carbohydrates, iron, B vitamins, and folic acid. They also provide a good supply of protein without fat and cholesterol. Traditionally white beans are used, but other kinds of beans may be substituted.


  • 1 cup (8 oz/225 g) white beans, soaked overnight and drained
