The following sauce can replace the relish just given. Because it is hot and thick in consistency, it will keep in the refrigerator for a long time. The color of salsa will greatly depend on the type of pepper used.

Method

  • In a medium pot cover peppers with hot water, and bring to a quick boil. Reduce heat to medium and cook gently for 15 minutes. Drain peppers, and set aside to cool.
  • Purée peppers in a blender or food processor. Then transfer them to a medium pot. Add honey, salt, cumin, za’tar or thyme, and garlic. Simmer uncovered, for 25 minutes. Stir several times while
