  • 4 sheets gelatine
  • 250 ml (9 fl oz/1 cup

Method

SOAK THE SHEETS OF GELATINE FOR 5 MINUTES IN A BOWL OF COLD WATER TO SOFTEN THEM.

MEANWHILE, HEAT THE CREAM WITH THE COCONUT MILK IN A SAUCEPAN ON MEDIUM HEAT, WITHOUT LETTING THEM BOIL! Take off the heat, then add the lime zest and sugar. Stir well.

NEXT, SQUEEZE OUT ANY EXCESS WATER FROM THE SHEETS OF GELATINE AND ADD THEM TO THE HOT CREAM. Stir to dissolv
