Ingredients

  • 80 ml strained fresh pink grapefruit juice
  • 40 ml sugar syrup

Method

  1. Heat the grapefruit juice and sugar syrup in a small heavy-based saucepan over medium heat to simmering point. Add the softened gelatine and stir until dissolved, then remove from the heat. Strain through a fine-mesh sieve into a heatproof bowl. Leave at room temperature until cool but not set.
