This is a simple, classic recipe for French bread that I’ve used for years. I learnt it at chef school. I use it to make dinner rolls, but it works well for French loaves.
Put the flour, sugar, salt and yeast in a bowl and add the water. Mix until soft, smooth and elastic (windowpane stretch test – see explanation under the bread-making tips). Proof in a bowl covered with plastic until double in size.
