Even the most elegant and elaborate duck dishes can be made in the same way as duck with peas. The only tricky part is cooking the vegetables so they’re done at the same time as the duck. Here are a few ways to cook vegetables that can be combined with the duck sauce or served separately on the plate.


Pearl onions

For 6 servings, peel 1 pint of pearl onions and put them in a saucepan just large enough to hold them in a single layer. Add enough water or broth to come halfway up the sides of the onions
