Here is an easy egg substitute which works well in many recipes, including the Chestnut, Carrot and Ginger Muffins and Teff Waffles. Freshly ground flax works best to make it as thick as possible – you’ll need a spice grinder, coffee grinder or a powerful blender. Just mix and leave to set, moving it to the fridge if it needs help with thickening.
