Boniato (white sweet potato) is one of the most versatile and traditional Cuban crops. It is eaten as a vegetable and also used to make desserts. The texture of boniatillo, a rich, sweet pudding, is a bit like a light sweet potato pie without the crust. Boniatillo is also the base of the delectable Cake de Boniato (Sweet Potato Cake).
