When I’m not travelling, I make this breakfast at home, or some version of it, several times a week. It’s healthy, tasty, and it plays well with all sorts of variations. For instance, if I have some smoked salmon in the fridge, I might top the avocado with that, or some nice, crispy bacon or turkey bacon. I tend to make my avocado toast at home with multigrain bread, but it’s tasty with a bagel too, or whatever bread you have on-hand.
