Method

Prepare the ganache 3 to 4 hours ahead of time. This is so it can be chilled. Chop the chocolate and melt it slowly in a bain-marie or in the microwave oven (on “defrost” or at 500 W maximum, stirring from time to time). Bring the whipping cream to the boil and add the butter and honey.
