  • 10 eggs
  • 3-4 tablespoonssugar
  • 5 large apples

Method

Beat the egg yolks with the sugar until the mixture turns white. Bake the apples in the oven (180°C, 350°F, gas mark 4), then make them into a purée by pressing them through a sieve. Mix with the beaten egg yolks and the potato flour. Beat the egg whites and add with the baking powder to the mixture. Pour into a baking tin and bake in the oven (190°C, 375°F, gas mark 5).
