Oh my, Shu Mai! This is my favorite dim sum dumpling because it’s so yummy, healthy (it’s steamed) and cute. My mother was an incredible seamstress, on top of being a master chef, so she made the pleating on her shu mai look effortless. It has taken me, however, several years to perfect my shu mai pleating. In fact, my mother once asked me, “Why are you so slow?” on camera while I was making shu mai for a Food Network special in China. She was hard on me, but it was always out
