  • 1 cup red wine vinegar
  • 1 cup water
  • 1 large onion, chopped
  • 5 whole cloves
  • 1 tbsp. dry dill
  • ¼ cup sugar
  • 1 tbsp. ground pepper
  • 2 tsp. salt
  • 3–4-lb. beef roast


    1. Add red wine vinegar, 1 cup water, onion, cloves, dill, sugar, pepper, and salt to the Instant Pot.
    2. Set Instant Pot on Sauté and bring mixture to a boil. Stir to dissolve sugar and salt.
    3. Place the steam rack into the Instant Pot and the beef roast on top. Secure lid and pressure cook on high for 2 hours.
    4. Let pressure release naturally. Remove lid when safe. Check roast for tenderness. Serve with red cabbage, Country-Style Potatoes, and freshly baked rolls.
